Maafe and rice

In honor of my latest film review Le noir de…(1966); I researched to find out what exactly maafe (the meal served in the film) was.  I was surprised at how easy it was to prepare and make.  Better than that how fabulous it taste!  The recipe is very flexible and adapts to your individual tastes.  The recipe I referenced this post from can be found here , but instead of chicken, I decided to use beef because that was the last meat I had in my freezer and it worked out great! I used a few variations to make this dish my own, so if you like, I included other versions of this meal at the end of this post!  I am excited to say that it is c’est magnifique!  I want to add that this stew tastes great with a glass of red wine!

I recommend using a heavy pot, like this dutch oven to cook the stew.

 

You will need:

 

  • 1 big onion, minced
  • 2 pounds of stew beef or beef cubes
  • 2 tablespoons of vegetable oil
  • 4 large cloves of garlic, minced
  • 1 tablespoon of minced ginger
  • 1/2 teaspoon of thyme
  • 2 tablespoons of tomato paste
  • 2 cups of chopped tomatoes (can)
  • 2 cups of beef stock
  • 1 stalk of celery even the leaves, minced
  • 1/2 cup of natural peanut butter
  • salt and pepper to taste
  • (I omitted the chili flakes, if you’d like for your stew to be a little spicy, go on an add 1/2 to 1 tablespoon chili flakes)

First, heat the oil in the dutch oven.  Add your meat and veggies to the pot.  You want to brown your beef slightly.  When this is done, add in your tomatoes and tomato paste.  Pour in the beef stock.  Let this simmer for about an hour or so.

Then, get a bowl and mix your peanut butter with your chili flakes and thyme.  Add in some of the broth from your pot to get your mixture smooth enough to add to the pot. Cook until slightly thickened.

Serve your maafe over steamed rice in a bowl.  Enjoy.

Simple.

Easy.

Delicious.

    Another great tip from your web pages. The Maafe was magnificent. I wish more people would try something different. The flavor seemed familiar, yet unique with the infusion of peanut butter and ginger. The crushed pepper gave it all a little heat, and an excuse to have a cold beer with my dinner.       Great! You tried this recipe. When I edited after I published, I decrease the peanut butter by 1/2. So that worked for you then! Any excuse to have a beer with meals is a great excuse! I will be adding more recipes so check back weekly!
